Even More Recipes for Thanksgiving

Thanksgiving is right around the corner! It’s time to finish up your Thanksgiving menus. Here are a few recipes that our friends and family will be having this Thanksgiving! We hope you enjoy these recipes as much as we do. Let’s get right into things! 

Baked Mac and Cheese

This particular recipe is one that I will be attempting for the first time on Thanksgiving. My Mamaw requested this be added to the menu for my family’s Thanksgiving dinner this year. She’s always wanted to try a baked mac and cheese and I am determined to satisfy that need in her life. Hopefully, this turns out good. Ingredients:

  • 1 lb pasta of your choice
  • ½  cup butter
  • .5 cup flour
  • 4 cups milk
  • 6 cups freshly shredded sharp cheddar or white cheddar
  • .5 tablespoons kosher or sea salt
  • .5 tablespoons pepper
  • 2 tablespoons butter
  • .5 cup panko breadcrumbs

Instructions:

  1. Boil pasta in salted water according to the directions on their package.
  2. Melt ½ cups of butter in a large saucepan over medium heat.
  3. Sprinkle in flower and whisk until thickened. Do not stop whisking and cooking until thick.
  4. Remove from heat.
  5. Grease a 9 x 13-inch baking dish.
  6. Add pasta to the dish.
  7. Sprinkle cheese over the top.
  8. Pour the thickened cream sauce over the hot pasta and cheese and let sit until the cheese melts.
  9. Stir everything together.
  10. Melt 2 tablespoons of butter over medium heat.
  11. Add in panko breadcrumbs, stirring constantly for about 3-5 minutes. Or until golden brown.
  12. Sprinkle the breadcrumbs over the Mac and cheese.
  13. Bake in a preheated oven at 325 degrees for 12-15 minutes.
  14. Enjoy!

 

The Best Mashed Potatoes

This one may seem basic to most people, but I wanted to share it anyways. I know there are some people out there who may have not mastered mashed potatoes so I wanted to share my family’s recipe for them. I do want to share thought that the measurements may not be 100% exact. We always eyeball everything so these measurements are an estimate based off what we normally use. Please feel free to adjust the measurements based on your taste. If you make this and the portions need to be adjusted, please feel free to let us know.

 

Ingredients:

  • 6 Large Russet Potatoes
  • 2/3S cup our Cream 
  • 2/3 cup Butter 
  • 1/2 cup Milk 
  • Salt (to taste)
  • Pepper (to taste)

 

Instructions:

  1. Peel the potatoes
  2. Cut the potatoes in cubes
  3. Boil the potatoes until they are soft enough to easily mash with a fork
  4. Drain the potatoes
  5. Add butter, sour cream and milk
  6. Use an electric beater to combine all the ingredients until you get your desired texture.
  7. Add salt and pepper to taste

Orange Creamsicle Cake

This is another family recipe. A great aunt shared this with my mom and as I got older I started taking over making this recipe. Now it is my contribution to all of our family gatherings. Again, I do want to let you know that the measurements are estimated off my eyeball measurements. Years ago when the recipe was shared with us, I’m sure there were exact measurements but since my mom and I both eyeball everything the recipe has slightly changed. The measurements listed are the best estimate. Please feel free to adjust the amounts of orange extra and powdered sugar to match your liking.

 

Ingredients:

  • Orange extract – 2 tablespoon
  • Orange supreme cake mix – 2 boxes
  • Powdered sugar – 2 cups
  • Whipped cream – 2 large containers
  • Sour cream – 1 small container
  • Orange extract – 2 tablespoon

 

Instructions:

  1. Follow cake recipe on the box.
  2. Before placing the cake mix in the pan, add 1 tablespoon of orange extract.
  3. Place cake mix in the cake pan. I use a round cake pan for mine.
  4. Bake cake based off the box’s instructions.
  5. In a separate bowl add whipped cream, sour cream, powdered sugar, and the remaining orange extract.
  6. Gently fold the ingredients together. Be sure not to mix too much as the mixture will become runny.
  7. Place the icing in the refrigerator until cakes are finished cooking and have completely cooled.
  8. Once cakes have completely cooled, remove them from the pans.
  9. Cut cakes in half, placing one layer on your cake stand (I place mine on a cake carrier as I am always taking mine to my grandmother’s house).
  10. Add a small amount of the icing mixture to the center and spread it to the edges creating an even covering.
  11. Add your second layer and repeat step 10. 
  12. Repeat the process for the next two layers. 
  13. Add the remaining icing to the top of the cake allowing it to go down the sides.
  14. Spread the icing evening over the sides of the cake and smooth it down.
  15. Refrigerate the cake overnight
  16. Enjoy!
