A Day of Crock Pot Recipes

After the holidays, it can be hard to get back in the swing of day to day life. To make it a little easier on myself, I also go to my trusty crockpot to help make cooking a breeze. If you have been keeping up with the blog lately, you know we’ve gone over several crockpot meals lately. I’d like to take some to go over just a few more. These next few recipes will cover breakfast, lunch, and dinner. That way no matter which meal you are struggling to cook this holiday season, you have at least one option for each!

Let’s break out those crockpots and get to cooking!

Breakfast: Breakfast Casserole

I don’t know about you but making breakfast is one of the most difficult meals for me to make. Justin and I get up early as it is so just waking up on time is a hard task. We are lucky to get up, make coffee, and get ready for work each day. Lately, we’ve been opting for a small snack to take to work with us rather than cooking a meal. That is why this recipe is perfect for us! We can prepare it the night before and when we wake up, breakfast is ready!

Ingredients:

  • 1 dozen eggs
  • 1 cup milk
  • 1/2 cup diced green onions
  • 1 package 32 oz. of frozen hash brown potatoes
  • 1 lb of bacon – cooked drained and cut into pieces
  • 2 1/2 cup Shredded cheddar cheese
  • 1 lb of sausage browned and drained
  • 1 diced green bell pepper
  • 1/4 teaspoon dry mustard
  • salt & pepper to taste

Instructions:

  1. Layer potatoes, bacon, onions, green pepper and cheese in the crockpot in two or three layers.
    Add cheese.
  2. Beat the eggs, milk and mustard, salt & pepper together.
  3. Pour over the whole mixture.
  4. Cook with slow cooker on LOW for ten to twelve hours or until eggs are set and thoroughly cooked.

Lunch: Taco Soup

Recently my coworkers and I have started “Crock Pot Thursday”. We pick a recipe and divide up the ingredients so that we all bring something. This is one of the first recipes we did and boy was it yummy! This is the perfect pick me up for any lunch hour. Maybe this will inspire you to start a crockpot potluck as we have as a team building opportunity for your workplace.

Ingredients:

  • 1 cup mild salsa
  • 1 (15 ounces) can black beans, rinsed and drained
  • 15 ounce can corn, drained
  • 1 (15 ounces) can pinto beans, rinsed and drained
  • 14.5 ounce can petite diced tomatoes
  • 1 packet of taco seasoning
  • 2 cups low sodium chicken broth
  • 1 pound boneless skinless chicken breasts
  • Optional toppings: sour cream, grated cheese, avocado, green onion, tortilla chips

Instructions:

  1. Place salsa, black beans, pinto beans, corn, diced tomatoes, taco seasoning, and chicken broth in slow cooker.
  2. Stir to combine.
  3. Nestle chicken into the slow cooker so that it’s completely covered by the liquid and other ingredients.
  4. Cover and cook on low for 6 hours.
  5. Remove chicken and shred or cut into bite-size pieces.
  6. Stir chicken back into the soup.
  7. Serve with toppings as desired.

Dinner: Pot Roast

For me, a pot roast is a great comfort food. There’s nothing like coming home to a good pot roast. The great thing about this recipe is a lot of grocery stores have prepackaged everything you need for a good pot roast. You normally find these prepacked pot roasts in the meats section. If you choose to use one of those rather than gathering the individual ingredients, be sure to follow the instructions on the package.

Ingredients:

  • 1 chuck roast (3-4 lbs)
  • 1 lb baby carrots (or carrots, cut to about 1″ pieces)
  • 1½ lbs potatoes (any variety, cut into about 1″ pieces if necessary)
  • 1 packet of dry beef and onion soup mix
  • 1 can of cream of mushroom soup

Instructions:

  1. Place half the potatoes and carrots on the bottom of the slow cooker.
  2. Next, place the chuck roast on top of the vegetables.
  3. Place remaining vegetables on top and around the chuck roast.
  4. Pour homemade dry onion soup mix and homemade cream of mushroom soup over the top.
  5. Cover with a lid and cook on low for at least 8 hours, preferably 10.
  6. Shred meat slightly with two forks, serve hot.

Bonus Recipe: Easy Cream Corn Recipe

Ingredients:

  • 1 package Frozen Corn or 2 Cans of Corn
  • 1 Can Cream Style Corn
  • 1/2 Can Condensed Milk
  • 1/4 tsp Pepper

Instructions:

  1. Mix all together in crockpot.
  2. Set on HIGH for about 3 1/2 hours or on LOW for 7 hours.
  3. Enjoy!
