3 Quick & Easy Crockpot Meals

Now that it is finally starting to feel like fall, crockpot meals have become more common in our household. This time of year is my favorite for crockpot recipes. They make dinner a breeze! And for our little family of 2, provides us with plenty of leftovers so we have dinner for another night. As a result, making these meals saves us money on groceries! I mean, who doesn’t love saving money and not having to put a lot of effort into dinner? So not only are the meals incredibly easy to make but they are extremely cost effective too!

These recipes are super simple and a huge hit at our house. So let’s break out those crockpots and get cooking!

Beef & Vegetable Soup

To tell the truth, this recipe is an absolute favorite of mine. That’s because it is incredibly simple and tastes SO GOOD! This recipe makes enough for Justin and me to eat on it for a few days. Sometimes though when I make this, Justin ends up eating it for almost every meal and for a snack. Therefore it sometimes only lasts two days maximum. This is one you definitely need to try!

The overall cost for the ingredients of this recipe is $13.50 and makes 8 servings. Which means each serving costs about $1.69 a serving! I mean, you can’t get much cheaper than that! Now, this price is based off the costs of the ingredients at my local Kroger. Meaning the cost may vary depending prices at your local store.

Ingredients:

  • Green beans – 1 can
  • Corn – 1 can
  • Sliced carrots – 1 can
  • Crushed tomatoes – 1 can
  • Beef choice for stew – 1 lb
  • Beef and onion soup mix – 1 packet
  • Salt and pepper to taste

 

Direction:

1. Place all ingredients in your crockpot

2. Cook for 6-8 hours on LOW or 3-4 hours on HIGH

3. Top as desired and enjoy!

 

Chili

Who doesn’t love a good chili? Check out our recipe for this super easy and delicious meal! I grew up having “Chili Mac” so I always make some macaroni noodle to add into my chili. But the macaroni noodles are optional. Several people I know prefer to have Fritos with their chili rather than macaroni noodles. It’s whichever you prefer.

The ingredients listed below cost a grand total of $8.30! And makes about 6 servings. Which means each serving only costs a mere $1.39 each! I mean, you can hardly buy a sandwich from a fast food restaurant that cheap!

Ingredients:

  • Chili seasoning – 1 packet
  • Light red kidney beans – 1 can
  • Dark red kidney beans – 1 can
  • Tomato sauce – 1 28 oz can
  • Diced tomatoes – 1 can
  • Ground beef (or turkey) – 1 lb

 

Directions:

1. Brown meat and drain

2. Combine all ingredients in the crockpot

3. Cook for 6-8 hours on LOW or 3-4 hours on HIGH

4. Top as desired and enjoy!

 

BBQ Pulled Pork Sandwiches

This recipe is currently Justin’s favorite Crockpot Meal. I made this for him for the first time about two weeks ago. He ended up having about four sandwiches for dinner that night. And then had two more for a snack a few hours after that! But the greatest thing about this meal is you put the meat on to cook the night before you plan on having it. And don’t have to worry about anything at all until you get home from work the next day. Once you get home you complete the remaining steps. Meaning you can work on other things while you are waiting for it to be ready.

The total cost of this meal is $18.42 making this the most expensive meal on this list. This recipe makes 12 servings though depending on the size of pork roast you get. Meaning each serving costs approximately $1.53 each. Again, still making it an extremely cheap meal per serving. You can’t beat that!

Ingredients:

  • 1 pork roast
  • 1 bottle of BBQ Sauce
  • ⅔ cups brown sugar
  • 1 tbs Tabasco sauce
  • Salt and Pepper to taste

 

Direction:

1. Place pork roast in your crockpot.

2. Fill crockpot halfway up with water

3. Add salt and pepper

4. Cook on LOW for 20 hours. (I place mine in the crockpot the night before and when I get home from work the following day, go on to step 5)

5. Drain water from the crockpot.

6. Shred the pork with a fork

7. Add the BBQ sauce, brown sugar, and Tabasco sauce

8. Mix thoroughly

9. Let cook on LOW for an additional 30 minutes to an hour

10. Serve on hamburger buns and enjoy!
